What feeding ratio should I use?
1:5:5 is a great default -- 1 part starter, 5 parts flour, 5 parts water. It gives the microbes plenty of fresh food. Use 1:1:1 only during the first few days of creating a new starter.
How much starter do I need for a recipe?
Most recipes call for 50-200g of active starter. Check your recipe and enter that amount here. The calculator will tell you how much to maintain.
Can I change the ratio?
Absolutely. A wider ratio (1:10:10) is great for reviving a neglected starter. A narrower ratio (1:2:2) is fine if you bake frequently and want to minimize discard.
